You need to dissolve the yeast. Check your recipe for the amount of liquid needed to proof your yeast. Make sure it is lukewarm only…too hot and it will kill the yeast, too cold and it will retard the yeast. Retarded yeast…yeesh. Add a pinch of sugar to the water while dissolving the yeast, wether it says to or not. Sugar acts like food for the yeast and will make it proof much nicer. Then open the packet, dump it into the water (in a warmed bowl, of course) and using a fork, swish it around. Let it sit for five minutes or as your recipe suggests and voila!
