How do i cook the eggs in spaghetti carbonara?
The best way I have found is to temper the eggs with a little hot water from the pasta (about 1/2 cup slowly poured into the eggs while whisking the egg yolks) Before I whisk in the hot water, I combine the eggs with the parmesan cheese, so when I whisk in the water, the eggs/cheese is very loose and pourable. As soon as I drain the pasta, I toss the pasta in the pan with the pancetta and then I pour the egg/parm/water mixture over the pasta and quickly toss to combine. it must be served immediately. In fact, I like to have my family sitting down when I mix in the eggs so I can just plate the food right away =====edit======== It appears that my way is almost exactly the same as the first poster with the one exception that I combine the eggs/parm with the water before bringing it together. Im sure either way will work fine.
