Whew. I often asked myself that question a while back and recently had the experience. 1. A home store like Menards or Home Depot should have the connectors in stock, depending on how large the piping and tubing is. If you have a brass nut on the end of the copper pipe from previous connection and you want to connect PVC to it, there is a nipple insert for the inside of the PVC and a type of sleeve that fits over the PVC. The nut goes on first, directed to the original feed threading. Then the sleeve fits over the PVC but inside the nut. Then the nipple fits inside the PVC. You mate the ends, and tighten the nut onto the copper pipe. Since you are using PVC you will need a near perfectly straight connection to the copper fitting, as the PVC does not bend well on short runs. If you have very low pressure you could probably buy PVC with inside diameter to match outside diameter of copper and use glue, but I have not tried that and doubt it would work for long or under much pressure.
