How do I compare PDF files as text instead of images, or vice versa?

Merge for Mac OS X is able to compare PDF files in two ways: either by extracting the text content from them and performing a text comparison, or by rendering the PDF files as a series of images (one per page) and comparing those as an image comparison. For text-based PDFs, the former is probably more appropriate.
