How do fresh vegetables differ from frozen vegetables nutritionally?
These days especially frozen does sometimes have a lot more nutrition than fresh, due to the long distances that vegetables are shipped and the extended time it takes them to reach our shelves. The longer something has been picked for the more it loses certain vitamins. A recent test showed that the vegetables we eat now have quite a significant amount less of the things we need. This is due to intensive farming as well as the long traveling time. If possible buy from local growers, good for you and the economy! I also really reccomend a book called ‘Not on the Label’ but I can’t remember who it is by. Brilliant book. Changed my habits.
Frozen veg can actually be more nutritious as they are generally frozen very soon after being picked and therefore don’t lose any nutrients and stay in good condition whilst frozen. Cook quickly in steam for best results (I defrost before cooking to reduce cooking time). Eat raw if you can – this ensures you ingest all the nutrtional content of the veg.
