How do current processing trends such as irradiation and modified atmosphere packaging interact with high E beef?
Both technologies increase the potential for oxidation of beef. Although no trials have been reported with irradiation of high E beef, several MAP studies have shown caselife improvements when cattle are fed 500-1,000 IU of supplemental vitamin E per head per day for the last 100 days before slaughter.
