How did the job as Princess Dianas personal chef come about?
Over the 11 years, the queen had 20 chefs at Buckingham Palace and I became a friendly face in the kitchen to Princess Diana. When Prince Charles and Princess Diana separated, she needed a chef and she asked if I would go work for her. She was great fun to work for 90 percent of the time. If there was a bad-hair day or bad-press day, those days you just stuck your head down and just kept on chopping your carrots. If she was on her own for lunch she’d just sit in the kitchen and chat.
