How did knights provide for themselves and their familes in the middle ages?

Knights were of the noble class so they got land and money through the king, marriage, or booty. If you weren’t noble you couldn’t be a knight and this started very young. The noble boys were put into training at 7-8 years old, became squires at 15, and a knight at 21. They were to give a certain number of days/months in the kings army and in training. This was part of their duty. They also served the king in other ways at court. Marriage of two wealthy families was also another way to gain land, money and power. Many knights also came back very wealthy from the crusades where they were able to gain booty. Add all of this together and they had no problems.
