Moses himself had Zipporah, a Midianite, as his wife (see Exodus 2 vv 16-21) and his brother and sister rebelled against him because of an Ethiopian wife which he had (see Numbers 12 v 1). If you want to get into the complexities of it you can establish that he had both these wives around the same time and that they were different people. So Moses likely had two wives at the same time, and he recorded these words in Genesis, without perceiving any contradiction. He then went on to regulate polygamy, allowing it to exist under the law, with no mention of it breaking anything mentioned in Genesis.
