How complicated or expensive is it to update plumbing in a one story house?

I saw a neat new plumbing system on “Holmes to Homes”. It uses relatively soft plastic pipe. How is the plumbing run, through the attic or under the floor? How easy would it be to re-run the new pipes? You might have to remove some bathroom cabinets. Some areas that can be a problem are bathtubs and showers. Walls may need to be broken out and tiles replaced. Also depends on how far the hot water heater is from all the outlets. While you are doing this, you might want to consider replacing your hot water heater with a tankless model, or even on the spot tankless heaters. I am planning on installing a gas tankless heater and this should cut my hot water expense in 1/2.
