How come the iPhoto photos on the iPhone or iPod Touch are so small?

Unfortunately, the photos synced to the iPhone and iPod Touch using iPhone OS 3 are resized to 640×480 or smaller for viewing on the iPhone. iPad and iOS 4 synced photos are also scaled down a bit, but not quite as small as iPhone OS 3 on the iPhone and iPod Touch.
