Change in momentum divided by time is equal to force. Hence, for a sufficiently large change of momentum i.e. large initial velocity the force will be large, breaking the egg. So, the parachute is used to slow the egg down and reduce the change in momentum, thereby reducing the force the egg experiences hitting the ground.
