The most likely reason is there is no recoverable deleted data. The backup file which iRecovery mounts is the same file that deleted data is recovered from. Sometimes, iPhones immediately overwrite deleted messages so they are unrecoverable. Apple indicates 4 milliseconds is all it takes to overwrite this data. No other program available to the public will be able to recover more data.
