What I find so fascinating about the American barbecue sauce is the passion with which each region represents their amazingly varied formulas. Not only that, but within each region there are also heated debates on what’s “best.” A perfect example is the South Carolina-style mustard and vinegar barbecue sauce. While all the recipes call for mustard and vinegar, there is absolutely no agreement whatsoever on the proportions, amount of sweetener, or level of spiciness.
