Your kids can have their own potato garden in a barrel or trash can. Drill some holes in the bottom of the growing container for drainage, place soil and/or compost 1 foot deep into the bottom of the barrel, and top with several inches of sawdust. Then plant seed potato pieces, cut side down, in the sawdust and water them. As the plants grow and potatoes start to form above the seed potato, you can add more sawdust mulch or some straw. The plant will continue to produce potatoes throughout the barrel instead of just in the bottom. Help your kids mulch continuously to keep the tubers covered. If any of the new potatoes become exposed to the sun, they may turn green and contain toxic solanine, which, in large amounts, can make you ill. When the foliage turns brown, your kids can simply turn the barrel on its side and pour out the contents.
