Coleman’s English Mustard spread thinly before the cheese goes on Oregano sprinkled lightly on top, or if you’re reeeeeally crazy, very finely chop some fresh rosemary and sprinkle that on. Very sharp knife, lots of tiny bits, or you will be sucking it out of your gums.

In order to spice things up a bit, boring and bland cheese on toast goes very well with a miriad of extra ingredients. For example, Lea & Perrins tends to go well if added to the cheese before it’s melted. Pepper always works.. For added spice, I add a dash of chilli sauce spreaded on the bread or on top of the cheese. Turn your cheese on toast into a mini pizza by spreading tomato puree on the bread before adding cheese and cooking. Some oregano or other mixed herbs finishes the pizza idea off nicely. If you love it and don’t hate it, try marmite or vegimite on the bread, under the cheese. Alternatively, you could go a bit oriental by sprinkling curry powder over the cheese before cooking, this also adds to the aesthetics of the cheese on toast by making the toast go a more golden brown when melted.
