You can pick them at any size that you want, and in fact ,if you let them grow for too long they get bitter and too mature for a nice taste that you want anyway..I pick my cukes anywhere from 2 inches long up to 6 inches.You may also have a variety of cucumbers that are called “pickling cucumbers” that are not to get long but get about 4 to 5 inches long and get fat..the best way to tell pickling cucmbers from the longer smooth skinned ones is they will have bumps all over them and small black thornlike things that come from the bumps, but do not stick you and rub right off..Look at a jar of pickles and you will see the bumps I am talking about.Pickling variaties are not so smoothed skin
