The beauty of hydro electric is that the storage is with a large supply of water and to generate electricity as and when it is needed, hydroelectric power stations can be very quick to start running (a few minutes) and are used to top up the national grid as required. So bearing this in mind from real hydro electric plants, you could have a resevoir of water to use as the energy store. When you need the power, turn on a valve, or tap, or whatever, the water flows and electricity is generated. This saves your need for a battery (this is replaced by the resevoir), and you can get a voltage regulator circuit to protect the components like a lamp – and you can get the circuit design off the internet easily enough.
