How your pie dough comes out has less to do with your ingredients and everything to do with how you make it. You can make a tender pie dough with butter. Tips on making pie dough: You want the butter to be cold. It can’t be so cold that it is impossible to make the pie dough, though. I cut the stick of butter into about 8 pieces, but it can be a little more or less. Mix the butter in with flour, and other dry ingredients. Use quick, swift motions with the tips of your fingers. Never use your whole hand to mix the dough. This helps it stay light. Try, just in the air, brushing your thumb against the rest of your fingers. Thumb moving forward, fingers back. A fast repitition of this should be used while “mixing” the pie dough. If the butter and flour are really crumbled together nicely, it’s easier to clump everything together.
