Melt the unsweetened chocolate bars in a double boiler… a heavy saucepan with acouple inches of water underneath and a HEAT SAFE bowl on top… DO NOT let any water into the chocolate or it will seize up and be ruined… Melt the bars over med. to low heat and stir frequently… Once melted you can add sugar to taste AND warmed heavy cream…..
