The GIF format supports a maximum of 255 colors, which indeed may reduce the original quality of a captured application. To improve the overall color quality at a cost of larger file sizes, try turning on the Dithering option when generating DemoGIFs. Also make sure that you set Bits per pixel to 8 (maximum), and turn on the Adaptive Palette option.
