I am assuming your cafeteria is an “all you can eat” operation. a) “Breads & Spreads” – different types of breads with attractive flavored butters, cream cheeses. b) “Ultimate Salad Bar” – make this huge with a wide assortment of greens, vegetables, fruits, dressings and toppings. c) “Beverage Station” – offer many flavors of premixed juice drinks and flavored iced teas that are dispensed from attractive machines. d) “Comfort Food” – offer “Mac & Cheese”, “Mom’s Meatloaf”, “Homemade Meatballs & Spaghetti”. e) “Healthy Desserts” – sliced fruit, jello, assorted grapes. Portion control is key. Use small glasses and plates. Small containers with small dispensing tools on the salad bar gives you room for more choices.
