In a situations like this a few years ago, I’ve used a composite-to-VGA converter. With this, I hooked up my game system over Composite or S-Video to a box that then output VGA to the monitor. If you’ve got a old analog monitor or a LCD that has both VGA and DVI input, this can work well for you. With the box I used, there was a remote control that switched between the computer’s output and the output from the game console. If your monitor has VGA and DVI inputs, then you’d switch with the controls on the monitor. As far as I can tell, there is no direct VGA output cable for the PS3, but there is one for the XBOX 360.
