How can I avoid having the Yahoo/Hotmail messages flagged as “Read” so they still appear as “New” when I check my mail on the email website?

A. From your account setup screen, check the “Headers Only” option. Then you will still receive email notification along with date/from/subject information but the body of the message will not be retrieved. Yahoo/Hotmail will keep the message flagged as “New”.
