How Are Tofu, Soya and Quorn Grown/Produced?
Quorn is the mycellium of a fungus grown industrially from the starch of field beans. It contains about 45% protein and 13% fat together with dietary fibre. Knowing that puts me off wanting to eat it! Tofu is also called bean curd, bean custard or soya bean cake. It a nutritious coagulated soya bean protein made by treating boiled soya milk with coagulants to make it more solid, like sea salt or vinegar. I love it, especially smoked tofu. Soya is broadly used for all products made from soya beans, like soya sauce, soya milk, soya flour or tofu. The soya bean comes from a bushy plant in the pea family and contains about 20% oil and 35% protein.
