How are the properties of water exploited during the desalination process?
The most common method of desalination is vacuum distillation. Vacuum distillation exploits the fact that you can, at a given pressure, convert water into vapor at a known temperature. Anything that boils off at a lower temperature isn’t water – throw it out. Anything that boils off at a higher temperature isn’t water – throw it out.
