How are the juice balls different than tapioca pearls?
Juice balls are not made with a starch like the tapioca pearls. The thin outside layer of the juice balls are made from a seaweed extract. When you bite down, a squirt of fruit juice bursts into your mouth for a sweet and pleasant surprise. The diameter of the juice ball is a bit smaller than the tapioca pearl so can be sucked up using the fat straw. When you bite into a tapioca pearl, it’s a chewy texture and have no juice in them. Both juice balls and tapioca pearls are great for smoothies, bubble tea drinks, ice cream, gellato, and shaved ice.
