How are the calcium and fat content compared to regular milk?
Thanks in advance for any reply. R.S., Lafayette, La. ANSWER: There are a variety of soy milk brands now available. The standard nothing-added soy milk reflects the nutrient composition of the soybean. Manufacturers, realizing that their product is often used to replace dairy milk, a major source of dietary calcium, now offer calcium-fortified versions. A cup of standard soy milk will contain about 5 grams of fat and about 60 milligrams of calcium. A calcium-fortified soy milk usually contains calcium at the level of cow’s milk, about 300 milligrams per cup. There are now soy milks in various flavors and with lower levels of fat. Some makers even fortify their soy milks with vitamins. I encourage you to check the labels to find one that meets your needs. Check at a natural food store if you are unable to find a good selection of soy milks at your local supermarket. Ed Blonz, Ph.D., is a nutritional scientist based in Northern California.
