Eating the gravy and the beef amounts same thing so far as the stigma attached to beef eating is concerned by the Hindus. Beef eating is forbidden to protect the cow so that it is not killed that serves us till its death by all her products and by-products. There is no concept of sin in Hinduism. It is in the mind of the doer.
