As a chef I cooked every part of the pig except the squeal, trotters or feet are very popular allover the world, ears have there place in US southern cooking, Mexico and I have used them when making jellied stock as they have alot of collagen, pig tails are very popular to, I have eaten them for years in both German and West Indian restaurants, I use a sweet sugar based BBQ sauce and oven braise them, heads are harder to find, but I did make headcheese or Brawn as it is known in the UK, I have also used the jowl, cheeks, and eaten pig brains quite often, there is not real non edible part to this creature.
