Yes, there have been many cases of aircraft landing on water and remaining afloat long enough for the passengers and crew to get out. The most recent example of this was US Airways Flight 1549, which successfully landed on the Hudson River in New York City after both engines were stopped by a flock of birds. The aircraft landed smoothly and safely on the river and floated for an extended period. The passengers simply walked out of the aircraft and onto the wings, where they were picked up by rescue boats. Flight 1549 wasn’t the first accident like this, however.
