Has anyones pet been injured from chewing through electrical cords?

The continual chewing in rodents is instinctive. Their teeth are constantly growing, so if they do not chew the teeth could grow too long to allow eating or will grow mishapen and also prevent eating. So if you don’t want them to chew on things, either keep them from it by penning them up (safest), or prevent them from reaching it by positioning it out of reach (similar to first suggestion), and always give them plenty of other material they would much rather chew on.
