Here is a great, simple recipe for flan. It is a rich custard dessert with a layer of soft caramel on top. It originated in Spain. Enjoy! Ingredients 1 1/2 cups sugar 2 tablespoons water 1/2 lemon, juiced 2 cups heavy cream 1 cinnamon stick 1 vanilla bean, split and scraped 3 large eggs 2 large egg yolks Pinch salt Directions To make the caramel: have ready a 2-quart round flan mold and a large roasting pan. Combine 1 cup of the sugar and 2 tablespoons of water in a heavy-bottomed pot or pan. Place over medium-high heat and cook until the sugar begins to melt. Swirl the pan over the heat until the syrup darkens to a medium amber color, about 10 minutes; don’t stir with a spoon. Remove from the heat and immediately add the lemon juice, swirl the pan again to combine, and then pour into the flan mold. Crispy Spanish Almond Cookie Recipe – Crispy Polvorones 2 1/4 cup vegetable shortening 1 1/8 cup sugar 2 cups powdered sugar 3 cups whole almonds (raw) 3 2/3 cups flour 1 tsp almond extract 1 tsp cinnamon 1 egg yolk (optional) Preparation: This crispy Spanish almond cookie recipe makes approximately 2 dozen cookies. You can buy the raw almonds in the bulk section of your supermarket, since this recipe requires about 1 lb. of almonds. First, grind almonds in a food processor. Make Dough & Refrigerate Cut vegetable shortening into the granulated and powdered sugars in a large mixing bowl. Add the ground almonds, almond extract and cinnamon and mix. Mix in flour one cup at a time. Mixture will seem dry or crumbly. You may want to use your hand to mix together the dough as you add the last cup of flour because the dough will be very crumbly. SPANISH FLAN (CUSTARD DESSERT) 2 c. sugar 2 (13 oz.) cans evaporated milk 4 (8 oz.) pkgs. Philadelphia cream cheese 2 c. sugar 8 eggs 2 tbsp. vanilla In the middle of the oven, put a pan with 1″ of water. Turn the oven to 350 degrees. Put 2 cups sugar in a tube pan and caramelize over high heat on stove top. Mix the remainder of the ingredients in an electric blender. Put the mix in the tube pan. Place the tube pan in the pan with the hot water in the oven. Bake for 1 hour. Introduce a toothpick and if it comes out clean it is done. Take it out of the oven and let cool. Cover and put in the refrigerator. When cold, flip upside down onto a plate, slice and serve. ///////////// FRIED MILK – SPANISH DESSERT 1/2 c. sugar 1/2 c. cornstarch 1/4 tsp. ground nutmeg 3 c. milk 1 tbsp. butter 1/4 tsp. grated lemon peel 2 eggs, beaten 3/4 c. dry bread crumbs Oil Powdered sugar Mix sugar, cornstarch and nutmeg in pan. Fry up some flour tortillas and then sprinkle lots of Cinnamon and sugar on them. That is really good. I think they call them “sopapillas” The real recipe is like a homemade flour tortilla dough fried and sprinkled with the sugar but its faster and easier to just use store bought flour tortillas.
