Gluten is actually two proteins, glutenin and gliadin. They naturally occur in wheat. They remain inactive until mixed with water in the process of making bread or other products. Then glutenin and gliadin form an amazing “web” that traps the carbon dioxide released by active yeast. The result is light, delicious bread.
