Well, you have the answer there already, apples go mushy when thawed due to their moisture expanding inside the fruit when frozen. But Woolworths, Australia’s largest supermarket chain, have cool rooms, and their suppliers have special cool-rooms which store fruit – apples particularly – in a Nitrogen atmosphere, which, in the absence of oxygen, keeps them as fresh as they can be. When you get apples six months out of season, you can bet your knickers they have been in Nitrogen for that long.
