First of all it needs to be made clear that heat encourages lycopene “extraction” and alters its structure, making it easier for the human body to absorb.This is why fresh tomatoes contain only 3-5mg of lycopene per 100g, whilst there is a much larger amount of lycopene in industrial products such as Pulp, Puree and Concentrate.
