Actually, all frozen veggies are processed and frozen at the peak of freshness, and still maintain all their nutrients. In some ways, they can be fresher than veggies that have been picked and shipped and have sat in the produce section of your supermarket for a few days! Of course how you prepare them will determine how many of those nutrients remain. I hardly ever use the amount of water suggested and cook them in just a tiny bit of water. They are just as nutritious as fresh. Forget canned veggies … not only have they lost more nutrients than fresh or frozen, they usually taste pretty bad, too.
