Does over-microwaving diminish nutritional content of food?
Cooking of any kind diminishes the nutrients in food, including proteins. Since it’s so easy to over-cook something in a microwave given the fact that the appliance loses potency over time and you have to cook the same foods longer in an older oven, it’s very easy to lose more nutrients in the microwave than you would cooking on a conventional stove or in a regular oven.
