I think it is outrageous that some people think that everything should be thrown out at the end of each day. People have no concept of waste and how appalling it is for the environment, or how unnecessary it is. Everything should be labelled with the date, covered and put in the fridge. It can then be re-used providing it is still fresh enough. Good management should ensure that there is very little left for more than a day or two. There is a terrible malaise of wastefulness of food in modern society which helps perpetuate factory farming as people do not respect the animals we slaughter. Cooked meats can be kept for up to a week, and raw ones about three days depending on which meat – maybe longer if it is beef or lamb. Remember red meats can be hung for up to a month, so they are unlikely to go off quickly. You can smell if it is no good and you are eating it at home. In a commercial restaurant etc obviously one has to be more date sensitive.
