Does Instant Coffee go off?
Since December, if it was sealed (cover screwed on tightly), and it wasn’t too warm, it should be fine. Unless it’s VERY old (years), about the only thing that will happen to coffee, instant, ground or regular, other than losing its flavor, is a) it can get moldy and b) the oils can get a bit rancid. Neither is likely to make you very ill (unless you have a bad allergy to mold), but either will make you wish you had thrown it out. In fact, if you open a fresh jar and make a cup, then try it again a few days later, you’ll notice a difference if you still have taste buds. (That’s why some of us prefer to refrigerate our coffee beans, and grind them as we use them. Coffee ground yesterday is kind of flat.
