Does increasing the surface area of the substrate increase enzyme activity? If so why?
Sounds like maybe in your experiment, you are increasing the availability of the enzyme for the substrate, and not necessarily increasing surface area of the substrate. Since you state that you increased the surface area of the liver, I would think that is where the enzyme is. If you give more details of the experiment, we could answer better, but the fact is that the more substrate, the greater the rate. The more enzyme, the greater the rate.
