The Meat and Poultry Hotline does provide general information regarding safe methods of food preparation. However, we do not provide in-depth, step-by-step instruction on home canning. This has traditionally been the role of USDA’s Cooperative State Research, Education, and Extension Service (CSREES-USDA).
