Does eating a diet high in fat contribute to Pre-Diabetes and Insulin Resistance?
No. Fat does not cause the glucose and insulin “spiking” that occurs with the repeated consumption of carbohydrates. A diet high in fat may not, however, enhance your chances of weight loss and can pose other health risks. The consumption of trans-fats has been shown to increase insulin insensitivity which can lead to Pre-Diabetes. Trans fats which are also called “hydrogenated fats” are found in crackers, some chips, cookies, bakery items, pastries and margarine and should be avoided completely.
