Besides bearing the açai fruit, the açai palm tree is also famous for its soft, inner core, namely the palm hearts that are used in salads and other “gourmet” dishes. Increased demand for açai means a greater economic incentive for local farmers to preserve the açai palm for its fruit rather than cutting it down for its palm heart (or for any other reason).
