Look, coconut oil – and, to an extent, saturated fat – has been given such a bad rap by the health schmexperts and anti-coconut oil gestapo out there. I want to set the record straight here. The fact is, coconut oil – at least, the extra virgin organic unrefined stuff that I consume (and the stuff I’d recommend you consume) – is completely healthy. In fact, if I had my choice, I would use it as my preferred oil to cook with, except I grill most of my stuff so that never comes into play. OK, sorry to get off track: it is a stable, healthy saturated fat that humans have consumed for thousands of years. There are populations in the south pacific who have consumed relatively high levels of coconut oil and have traditionally enjoyed low rates of heart disease, cholesterol and diabetes.
