You can make natural soap readily without coconut oil but making bars that really lather well demands that coconut oil is included. Lovely great big bubbles are what you gain with coconut oil in your recipe. Without it you tend to get small bubbles and a thin lather. However, you only need to include coconut oil as a fraction of the total base oils. If you use too much, your finished product will clean too well and it will dry your skin.
