Does citrus juice really help keep an avocado from going brown?
When an avocado is cut or peeled, the enzyme called polyphenol oxidase (tyrosinase) which is contained in the cells is exposed to and reacts with oxygen in the air. This reaction is called oxidisation and the acidic properties of various citrus juices (lemon, orange, lime) counteract the process, preventing the corrosion of the fruit i.e. stops it turning brown.
