Does cherry & chocolate sauce go well with duck?
We think of chocolate as being sweet, originally, it was very bitter. I have some chocolate in the cupboard that I use in savoury dishes like chili, beef casseroles, stews etc. It is 99% cocoa solid and eaten on its own: quite disgusting, as one of my greedy friends found out! This is the chocolate you would use for the duck recipe. I have had duck in a chocolate sauce and I didn’t like it. It was far too rich. Make a cherry sauce on its own for the duck is a classic and will work very well. So will orange sauce. Kumquats work very well too because they are more tart than oranges.
