I assume you mean cooking over coals rather than charcoal that forms on the meat when you burn it. In that case, charcoal adds a smoky flavour to meat that some people really enjoy, propane does not add this smoky flavour. If you like a smoky flavour on your meat then charcoal cooking is better, but this is really a preference question, and for me I would rather cook with gas than coals.
