Cattaneo Bros. Turkey Jerky contains NO preservatives. We add Sodium Nitrite to our Beef Jerky to inhibit the growth of bacterial spores that cause botulism, a deadly food-borne illness. Nitrites act as an antimicrobial to prevent the growth of molds, yeasts and bacteria and are used in the production of most processed food in the U.S. food supply for public safety. None of Cattaneo Bros. products contain MSG (monosodium glutamate).
